Cacao, food of the gods
The magic of the cacao plant has been celebrated for thousands of years. Originating in Central & South America, cacao was made into a drink by Mayans “chocolhaa” and Aztecs “Xocolatl’ and used in special celebrations and rituals. It was so valuable it was even used as currency. The Spanish colonisers took the Mayan root word “kakaw” and turned that into the “cacao” we know today.
Theobroma cacao, the scientific name given to the cacao plant alludes to the god-like status cacao was given, as Theobroma is derived from the Greek words theo ‘god’ and broma ‘food’, making cacao ‘food of the gods.’
The cacao itself comes from seeds “beans” that are found inside the fruit that the cacao tree produces. The fruit are oval pods, which are opened to reveal the seeds covered in a white pulp. The cacao pulp itself can actually be eaten and is full of antioxidants and minerals that are really good for the body and the taste is very fruity, kind of like lychees. Usually in the process of turning cacao beans into chocolate, the beans are fermented, which removes the pulp, sometimes roasted to change the flavour, then the cacao is separated from the shell and pressed into a paste.
